This is a recipe I have tried a few times now. I think salmon tastes great on the BBQ on it’s own but I find that marinating the salmon really takes it to another level. I love this mix with the sweetness of the maple syrup combined with the heat from the mustard.
With this recipe I do the fish on cedar planks which allows you to grill over a direct heat, which not only protects the salmon but also infuses the fish with the smokey wood. You do need to be careful that the planks to not set alight, even after soaking them for a few hours. If you want to try this I find the Smokewood Shack have a really good selection of wood planks at a good price.
I serve the salmon with new potatoes and asparagus which I also do on the barbecue. I cook the asparagus on a small baking tray just covered with a small spray of olive oil and seasoned with some rock salt.
